Onion and apple might not sound
like the best combination but you will be surprised how well onion and apple will
compliment one another. Trust me….you give these tarts one try and you won't
regret it. The good thing about these Onion and Apple Tarts is, they are pretty
easy to make, have an elegant presentation (that is surely bound to make you stand
out) and the combination of onion and apple together bring out an unexpected delicious
flavor. Pair these tarts with a bottle of Gewuerztraminer, which is a sweet off-dry
wine and goes exceptionally well with slightly sweet foods.

The great thing about these tarts is, you can prepare them in advance and store in
the fridge, wrapped in a cling or foil on a baking sheet

Ingredients
|
This recipe serves 6 to 8 persons. Double the recipe if you want to serve it for a gathering over tea.
|
Add 4 tablespoons of butter which has no salt. This is same as one half stick of butter.

Take 2 onions cut into half, and sliced thin
|
Add 2 teaspoons rough kosher salt (preferably)
|
Add 1/2 teaspoon black pepper (try to use freshly ground pepper)
For the tart, get Pastry dough for one 11-inch tart that fits into a 9-inch deep-dish pie
|
Take 3 eggs (preferably large sized)
|
Take 1 cup cream (beat the cream well enough till it is appears light and fluffy)
|
Add 1 1/2 teaspoons ground nutmeg, (using freshly grounded nutmeg gives a great aroma)
|
Add 1 sweet-tart baking apple. Good varieties are McIntosh or Jonathan
|
You require an 11-inch tart pan that easily springs open from below (this pan should be 1 1/8 inches deep)

Preparation
|
Start the preparation work by cutting the onions and apples. Slice and chop the
onions very thinly. Peel the apples and cut into pieces approximately the size of
onions.

Take a large skillet and add butter. Cook on medium heat. When the butter melts,
add onions. Stir the onions for 5 minutes and add salt and pepper over it. Stir
the onions occasionally till they become pale gold. Be careful not to let onions
darken. Place the onions aside to cool.

Now start the preparation for the dough. Clean your kitchen counter and roll out
dough to a 14-inch circle. Use the 11-inch fluted pan with removable bottom and
fit your dough nicely into the pan. Let the sides be 1/2-inch longer then the center.
Fold the overhanging dough back into the pan to create a grooved edge. Pierce the
bottom of the pastry all over by using a fork. Place the tart in the refrigerator
for 30 minutes.

Now preheat your oven to 400 degreesF.
|
|
Place your cooled pan on a rimmed baking sheet and line it with foil and pie weights.
Bake pastry for 15 to 20 minutes till the pastry is well set and the rims appear
pale gold. Carefully remove the foil and weights and continue to bake till the pastry
becomes golden all over. This will take another 10 to 15 minutes.

While the pastry is getting baked, you can consecutively take a bowl and whisk eggs,
cream and nutmeg. Place your onions in this mixture.

Take out the pan from the oven and put the entire egg mixture into it. Place apple
slices on it, the way you like it so that it makes for an elegant presentation.
Bake for another 25 to 35 minutes till apples become lightly brown. Take out your
yummy tarts and wait for 10 minutes to cool down before you serve. The savory, very
